Origins of the cuvée


In the 12th century, the Templars established a guard house at Bonpas in the Comtat Venaissin. A Templar guard house was built in Visan, a highly strategic location for Pope Jean XXII.

Localisation

This cuvée hails from the temperate zone of the southern Rhone Valley, where the soil is composed of stony plateaus, rounded cobbles and calcareous gravel overlying yellow marls that date back to the Miocene Era.

Grape varietals

Grenache noir , Syrah and Carignan

Vinification and maturing

The grapes are destemmed, vinified separately so as to preserve all of the potential of each varietal. Fermentation takes place in stainless steel tanks using extraction techniques such as rack and return and pump-over while maintaining the temperature at 28°C. Once fermentation is complete, the varietal wines are blended and kept under controlled temperatures for maximum freshness.

Tasting notes

Visual: intense garnet red in colour and lovely brilliance.
Nose: aromas of ripe, red berries ranging from wild cherry to strawberry coulis, underscored by a hint of spices.
Palate: starts off bold and powerful, supported by pleasing minerality and notes of cinnamon and white pepper, ending on a long, complex finish.

Food and wine pairing

Subtle and delicate when served at 17°C.

A fine match for roasted quail with chestnuts, Provencal style rack of veal, or roasted pork with prunes.
