100% Pinot Noir.
Colour: elegant garnet red.
Nose: aromas of ripe red fruits and toasted spices.
Palate: a rich, fresh and fruity wine in the mouth carried by supple silky tannins.
To appreciate with a terrine or a roasted chicken, but also a tuna steak in tomato sauce, or slightly aged cheeses.
Ideal served at a temperature of 14 to 16°C.
A wine that will age at least 5 years after the vintage in good cellaring conditions.
The vineyard covers now around 41 hectares mainly surrounds the Château, built in the 16th Century at the southern edge of the Côte de Beaune.
The grapes were hand harvested from the 13th to the 24th of September, then sorted and destemmed.
Traditional vinification was then carried out in temperature-controlled concrete vats with daily stirring and pumping-over. Alternating those two methods is a good way to obtain balanced wines because the tannins are not too much extracted.
Then, the wine is put for 9 months aging in oak barrels in a large majority (75%) with around 25% new oak.
