Palate : The palate is rich, robust, and compact. It softens over time, becoming round and flavorful, with notes of forest floor, wild fruits, and licorice.
Vinification and maturingGrapes are hand-harvested into crates of approximately 18–20 kg. They undergo a maceration of 12 to 18 days, including 2 days of cold pre-fermentation at 15 °C. Vinification takes place in concrete tanks with punch-downs during the pre-fermentation phase and the start of fermentation, followed by daily pump-overs. The wine is then aged for 10 months in oak barrels, developing depth and complexity.
