Origins of the cuvée


We wanted to showcase our expertise in Grenache, the ‘King’ grape variety of the Southern Rhône Valley and the cornerstone of the Bonpas signature wines. To this end, we meticulously selected the parcels with our winegrower partners. We carefully considered each soil, climate (temperate, moderate or hot), exposure and altitude. We have identified parcels of old, proud, majestic vines, custodians of an ancestral heritage. Experience shows that Grenache – a multifaceted grape variety - balances itself out naturally over time.
The older the vinestock, the greater the balance of the bunch load.
After 60 years of age, yields are lower with more concentrated flavours.

Localisation

One hectare of 101-year-old Grenache, located in the prime foothills of  legendary La Crau Plateau in Châteauneuf-du-Pape, has been cultivated by the same family for 5 generations. The soil is made up of stony quartzite colluviums,  fine sand and pebbles. The specificity of this soil is that its most interesting part lies up to 5-6m deep. Since 1922, the unique soil, ideal exposure and bush vine pruning have allowed this parcel to withstand the high summer temperatures and water deficit in recent years.

Grape varietals

100 % grenache noir - Bush vine pruning is ideal for Grenache. It creates a ‘microclimate’ around the vinestock, alternating shaded and sunny areas, encouraging beautiful slow ripening of the grapes, without excessive heat.

Vinification and maturing

Total destemming of the harvest. Traditional Rhone method with Grenache fermentation, immersion of the cap at the end of fermentation to achieve optimum maceration of the grapes at a maximum temperature of 25°C. The long winemaking (2 to 3 weeks) allows the aromatic bouquet and roundness of the wine to develop thanks to daily pumping over. The wine is aged for 10 months in stainless steel vats.

Tasting notes

Remarkable expression of hundred-year-old Grenache. Here, it expresses its fine aromatic range of fruits à l'eau de vie, ripe black fruits, black olives, spices and garrigue herbs. Beautiful minerality and generous complexity on the finish, with notes of toast, sweet spices and garrigue; very characteristic of great Châteauneuf-du-Pape. Ageing enhances the balance, aromatic complexity and smoothness of this exceptional and rare Cuvée.

Food and wine pairing

Open  2 hours before serving between 13-15°C with guinea fowl supreme with porcini mushrooms, pork filet mignon stuffed with dried fruit or truffle omelette.
