De Aureo Spirito is a brotherhood formed by owners of great historic houses of Burgundy.
Their coats of arms attest of the ancestral traditions of our region.
With subtle maturing, the wines are produced in limited quantities.

Grape varietals

The Chardonnay is the only grape variety of the Chablis.

Origins

Chablis, situated near Auxerre in the Yonne department, is among the northernmost vineyards of Burgundy. It is thus nearly at the gates of Champagne and the Paris region; which it greatly relied on to create its reputation.

Slightly removed from the « heart » of Burgundy’s vineyards, the region of Chablis started to prosper in the 19th century thanks to its waterways; the l’Yonne and the Seine rivers.

It is characterized by producing exclusively white Chardonnay wines and by its geology which is believed to date back to the Kimmeridgian period.

The Chablis vineyards are planted on various hills in the valley of Serein, the peaceful river that crosses the region.

Tasting notes

Colour: pale golden yellow, limpid and bright.
Nose: mineral and white flowers aromas with a touch of citrus.
Palate: the mouth is lovely, with fullness, mineral and fruity (citrus and fresh grape flavors). Round, well-balanced acidity, this wine is fresh, tonic and has a nice powerful finish.

Food and wine pairing

This wine is particularly good paired with fish and shellfish, but also frog legs, veal stew, poultry in a cream sauce, and sheep cheeses.

Serving suggestions

Serve at a temperature around 13-14°C.

This wine can be enjoyed now or kept in the cellar for the next 3 years in optimal conditions.
