De Aureo Spirito is a brotherhood formed by owners of great historic houses of Burgundy.
Their coats of arms attest of the ancestral traditions of our region.
With subtle maturing, the wines are produced in limited quantities.

Grape varietals

100% Savagnin, the only vine variety authorized for this wine. Savagnin is a typical Jura variety, flourishing on its grey marl and ripening slowly.
This demanding, patient vine variety is the best type for oxidative 'film' maturation.

Origins

The Jura wine region is small in size but large in its remarkable diver- sity. It covers 80 kilometers between Burgundy and Switzerland, in eastern France.

Since 1937, this typical village overlooking the Seille Valley has been producing CHATEAU-CHALON AOC, which is considered to be one of the world's greatest vintages.

The name "Vin Jaune" comes from its intense golden yellow colour. People say that although this wine is first of all a pleasure to look at, its taste is just as spectacular.

Tasting notes

Colour: beautifull yellow gold.
Nose: typical aromas with a fresh walnut “bouqet”.
Palate: the wine has a classy style and has a classy taste. It is ample but not heavy. It is distinguished and well balanced. Mouth is complex with walnuts, chestnuts and some green curries. After mouth is so long…that it seems that it would never ended. A beautiful wine!

Food and wine pairing

This dry, powerful wine ages wonderfully well. It can also be enjoyed at any moment, from the appetizers to the dessert: Comté cheese, gougères (baked savoury choux pastry made of choux dough mixed with cheese), mushrooms on toast, poultry, white meat or fish with cream sauce and vin jaune, snails, crayfish, risotto, exotic, spicy dishes, Comtois cheese platters, and walnut gâteau. It is also wonderful for making cream sauces. Open bottles one hour before drinking.

Serving temperature: 14–16°C.
