Grape varietals
The Pinot Noir is the only grape variety used for the Nuits-Saint-Georges.
Origins
In the heart of the Côte de Nuits, between Beaune and Dijon, Nuits-Saint-Georges is actually divided in two different parts; the northern part in the direction of Vosne Romanée to the Serrée valley which is mainly made of hills, and the southern part extending to Prémeaux which is a much flatter zone. This vineyard stretches on 300 hectares with an average production of 15 000 hl per harvest.
Tasting notes
Colour: a deep ruby red color with violet highlights.
Nose: powerful and rich with notes of spices mixed with aromas of small red fruits.
Palate: the mouth is round, rich, and complex with very present and distinguished tannins. It blends aromas of black fruit and offers a subtle oaky finish.
Food and wine pairing
Serve this great red Burgundy with a haunch of venison, duck meat, and with roasted red meats or red meats in sauce. At the end of a meal, try it with Coulommiers cheese followed by a black cherry pie.
Serving suggestions
Serve at a temperature of 16 to 17 °C.
Ageing potential
This wine can be opened now, but can also be kept in the cellar for 10 years.
Vinification and maturing
The grapes were harvested by hand and sorted manually on arrival at the winery. All the grapes were de-stemmed. Cold maceration for 6 days at 8°C. Ten days of fermentation in steel tanks, punching down 3 times/day during the fermentation at a temperature of 30°C. Pumping over 2 times/day for 5 days. Soft and vertical pressing. Ageing in 10 % new Burgundian oak barrels of 228 liters, 60% one year barrels and 30 % two years barrels
Vintage : 2015
Here is a vintage we will remember for a long time, with a solid reputation that has already travelled throughout the world. In all my winemaker's memory, we have not seen such a vintage in a very long time!
The seasons came and went while leaving their mark on the vine: a rather cold late winter caused the vine to suffer more than usual, forcing it to draw its strength from the very depths of the soil in order to allow the buds to bloom.
A mild and dry spring allowed the vines to develop peacefully and a very warm summer filled their fruit with sunshine.
In the year 2015, the seasons have produced the perfect grapes, of an irreproachable sanitary condition and an optimal maturity. A winning combination for this exceptional vintage. The wines all present a balance with incredible aromatic fullness and amazing concentration. The only downside has been the yields - but then again this does bring another touch of originality to this remarkable vintage.
