Fortant goes again to the discovery of Mediterranean terroirs to create the first organic vintages dedicated to vegetable cooking
Our white GAIA Coteaux d’Aix en Provence cuvée is composed of a blend of Vermentino, white Grenache and Sauvignon Blanc grapes hailing from the western part of the Coteaux d’Aix en Provence appellation, where the soil is a mixture of silt, sand, and limestone.
The growing methods used embrace the principles of agro-ecology:
preservation and development of biodiversity
control over and reduction of the use of fertilizers and plant protection products
water management, and choice of plant material suited to the area’s environment.
The grapes in each plot are harvested at their peak of ripeness and vinified separately: Pre-fermentation maceration in contact with the must deposits to develop the wine’s potential aromas and flavours is carried out, followed by fermentation at moderate temperatures (18°C) to preserve all of the wine’s finesse and freshness.
Aged in concrete/stainless steel tanks on fine lees for 4 months in order to enhance this wine’s fruit and texture.
Mimosa yellow in colour, this wine offers a generous nose featuring notes of mandarin and linden blossom. Floral and full-bodied on the palate with flavours of citrus fruit followed by a long, delectable finish.
