Fortant goes again to the discovery of Mediterranean terroirs to create the first organic vintages dedicated to vegetable cooking
Our red Gaia St Chinian cuvee is composed of a blend of Syrah and Grenache grapes grown in calcareous clay soils dating back to the Secondary era in the southern part of the St Chinian appellation.
The growing methods used embrace the principles of agro-ecology:
preservation and development of biodiversity
control over and reduction of the use of fertilizers and plant protection products
water management, and choice of plant material suited to the area’s environment.
The grapes in each plot are harvested at their peak of ripeness and vinified separately with fermentation at moderate temperatures and gentle extractions in order to preserve all of the wine’s fruit and typicity. This is followed by a 7-day period of warm post-fermentation maceration to soften the tannins and develop texture
Partially aged in barrels (30%) for 6 months to lend length and complexity to the wine and in tanks (70%) on fine lees for 6 months to develop fruitiness and texture.
This garnet red coloured wine offers a generous nose redolent of blueberry and strawberry with a hint of liquorice. Full-bodied and complex on the palate, boasting flavours of black fruit enhanced by a touch of cocoa and a long finish.
