VARIETAL

The Chardonnay is the grape variety for the white Hautes-Côtes de Nuits wines:

- Pruning: Guyot, Cordon de Royat.
- Harvest: Manual
- Yields: allowed 66 hl/hectare (59 hl:ha in high vines)

TASTING NOTES

- Yellow gold colour, clear and bright with green hues.
- The finely wooded bouquet offers aromas of baked apple, hawthorn, honeysuckle, with some mineral notes.
- On the palate, the wine is fat, strong, well-balanced with side a little frisky which is easily noticed. This also allows it to age well. A finely wooded wine thanks to a maturing in oak barrels, reminiscent of ripe fruit with hints of vanilla and caramel. Very long finish.

ORIGIN

The Hautes-Côtes de Nuits vineyard is spread out over the Côte de Nuits vineyards, from Dijon to Corgoloin. It covers the well exposed slopes of the hills overlooking the Côte at an average height of about 100 to 150 meters above the Côte. The climate suits the growing of vines and the exposed position of the vineyard offsets the effects of its height.

VINIFICATION AND MATURING

The grapes are sorted and direct pressing. The wine is settled for 24 hours at a low temperature (10°C./50°F.). A racking separate de clear juices from the bad lies. The alcoholic fermentation takes place in stainless steel tank over thermo -regulation system.(16 to 18°C./ 60-64°F/). 30% of the blend are matured in barrels and 70% are matured in stainless steel tank during 9 months.
