Tasting notes

Color: Bright and clear ruby red.

Nose: Elegant, fruits in alcohol, cherry, sloe.

Palate: Full-bodied with a dominant of cherry. Fleshy, firm, with a good vivacity, often with rhubarb scents.

Food and wine pairing

It goes well with roasted meats such as veal fillet with mild curry or, more traditionally, a petit salé. With its charming and spontaneous harmony, it goes well with simple dishes such as pork filet mignon, veal or lamb, accompanied by small vegetables or gratins

Origins

Regional appellation, it covers 22 communes of Côte-d'Or and 7 communes of Saône-et-Loire. The Hautes-Côtes de Beaune vineyard overlooks the Côte de Beaune, at an altitude of 280 to 450m. The Hautes-Côtes de Beaune covers approximately 833 hectares, of which 668 hectares are Pinot Noir.

Vinification and maturing

The grapes are hand-picked, passed over a sorting table, crushed, destemmed, then vatted for about 15 days and aged in barrels for about 12 months.
