Production area

The Aloxe-Corton appellation covers 119 ha on the territory of the town of Aloxe-Corton and 8.5 ha on that of Ladoix-Serrigny, at the beginning of the Côte de Beaune. Nearly half of the vineyard area is classified as Grand Cru and no less than 17 classified Premier Cru.

Origins

The climat "Les Paulands", located under the Corton Grand Cru "Les Bressandes", is divided into three levels from top to bottom classified Grand Cru, Premier Cru and Village. Its name comes from the old French word 'Pol' which means 'pond/limon', probably linked to the presence of ancient marshes (just like its neighboring climat "Les Valozières" whose name means 'wicker valley').

Tasting notes

COLOR: Nice dark ruby color.
NOSE: Expressive nose with notes of red berries (raspberries, strawberries, cherries), some floral notes (peony) and delicately woody.
PALATE: A full-bodied wine, but a refined, elegant structure. Tender and fruity, finely wooded, with silky tannins, it is well balanced and racy.

Vinification and maturing

The grapes are harvested and sorted manually upon arrival at the winery.
Grapes are 100% destemmed. Cold maceration for 4 days at a temperature between 8° and 10°C. Ten days of fermentation in stainless steel tanks, punching down twice a day with pumping over during fermentation and use of selected yeasts from the Burgundy region.
Aged in 228 liter oak barrels for 15 months with 25% new barrels.

Food and wine pairing

Ideal with a wood-fired entrecote, goulash or strong cheeses like Epoisses.

15-16°C.
