Tasting notes

Color: Clear ruby-red color.

Bouquet: Graceful aromas of fruit in eau de vie, cherries blackcurrant.

Palate: This well-structured wine is rich and generous, lots of body and flavor (especially cherries). Good acidity levels for perfect balance.

Wine and food pairing

This wine is ideal with hot starters, fish and seafoods in sauce, red meats and cheeses.

Serving suggestions

Serve at around 15-16°C.

Ageing potential

Côte de Beaune wines benefit from excellent tannin content, essential for ageing. This wine from the Hautes-Côtes is no exception. It can be kept for at least five years and up to ten. The flavours will become stronger with age tending toward more towards animal and musk aromas.

Origins

The Côte de Beaune takes its name from the town of Beaune, located about 40 kilometres south of Dijon. Hautes Côtes actually means "High Hills", indicating that this wine comes from the vineyards located in the hills behind the prestigious Côte de Beaune. The average altitude is higher than that of the other Beaune wines, at about 300 to 400 metres, but excellent exposure to the sun compensates for this creating excellent ripening conditions.

Vinification & ageing

Harvesting is traditional: total or partial (75%) destemming precedes maceration that lasts 48 hours. Vatting lasts around twelve days or more depending on the vintage. The wine is aged in casks for 12 months. Malo-lactic fermentation is always completed.
