OriginRully is located in the Côte Châlonnaise (hills of Châlon) named after the nearby town of Châlon, just south of the famous Côte de Beaune in Burgundy.
The vineyards cover an area of 290 hectares on the slopes of a chain of hills, always facing south to north-east to get the best exposure to the sun for ripening.
The Rully vineyards are considered similar to those of the Côte de Beaune with soil composed mainly of chalk and clay.
Vinification and maturingThe grapes are harvested by hand. First, a cold maceration for 4 days at 8-10 ° C. Then begin the alcoholic fermentation in the presence of selected yeasts of Burgundy. Punching down twice a day. Total maceration: about 18 days. Aging 100% in French oak barrels for 12 months. Bottling after a slight final filtration.
