Chartreuse de Bonpas

Origins of the cuvée



Since 1318, the Bonpas Charterhouse has stood guard from its fortifications ensuring safe passage from Rome to Avignon.

Localisation

The grapes are sourced from both the right and left banks of the Rhône River, in particular from Côtes du Rhône vineyards Communal Villages.

Syrah , Grenache, Mourvèdre

Vinification and maturing

We co ferment the different grape varieties. Physical extractions using devatting and pumping over techniques at the beginning of fermentation give way to the traditional Rhone Valley method, which consists of submerging the pomace cap at the end of fermentation. This final extraction, conducted at 28 C, is comparable to an infusion. While respecting and preserving the aromas and flavours of jammy red fruit, it allows the wine to acquire smooth velvety tannins and guarantees good length on the palate

Tasting notes

Visual: garnet. Nose: lively mix of fragrant bramble, ginger spice, dark kirsh and flowers. Palate : perky blackcurrant fruit mingles with richer plums and berry notes, lifted leads on to a spicy finish, coming in to its own.

Food and wine pairing

Serve between 15 17 C with all types of red and white meats, whether roasted, grilled or stewed Also pairs well with cheese.
