Origins of the cuvée

We wanted to showcase our expertise in Grenache noir, the ‘King’ grape variety of the Southern Rhône Valley and the cornerstone of the Bonpas signature wines. To this end, we meticulously selected the parcels with our winegrower partners.  We carefully considered each soil, climate (temperate, moderate or hot), exposure and altitude. We have identified parcels of old, proud, majestic vines, custodians of an ancestral heritage. Experience shows that Grenache – a multifaceted grape variety - balances itself out naturally over time.
The older the vinestock, the greater the balance of the bunch load.
After 40 years of age Grenache noir is said to attain perfect maturity.

Localisation

The parcels we have selected in the southern Côtes-du-Rhône lie on complex soils, stony clay-limestone, conducive to a natural balance between alcohol and tannins. These soils are rich in trace elements and have balanced water reserves, without excess. The vines also benefit from remarkable exposures enabling them to withstand climatic variations for half a century.

Grape varietals

Mainly Grenache & Carignan varieties remarkably well established in their terroirs, where they have naturally found their balance from one vintage to the next. The 50-year-old vines have fewer bunches than younger vines, producing more concentrated berries with optimum tannin/sugar balance.

Vinification and maturing

Co-fermentation of the different grape varieties. Fermentation gives way to the traditional Rhone method of immersing the caps at the end of fermentation. This final extraction at 28°C is comparable to an infusion. While respecting the aromas of stewed red fruit, it produces velvety, round tannins and a long finish. Aged for 8 months in stainless steel and concrete vats.

Tasting notes

Bouquet of ripe red fruit mixed with hints of liquorice. On the palate, the roundness and sweetness of Grenache mingle with hints of garrigue herbs. A certain minerality is present due to the terroir. Well-balanced flavours, with spicy notes on the finish. Good ageing potential as it develops its mature flavours.

Food and wine pairing

Serve between  13-15°C with grilled meat, lightly-spiced simmered dishes
