100% Pinot Noir.
Colour: Deep ruby.
Bouquet: A rich, complex nose, combining aromas of red and black berries with floral notes (peony) and a slight spiciness.
Palate: Rich and silky on the palate, with a fine tannic structure underpinning flavours of cherry, raspberry and a hint of vanilla.
This wine pairs wonderfully with a variety of dishes, including lamb, rabbit, poularde, duck and traditional Burgundian stews such as coq au vin.
Best served at room temperature, around 15-16°C. (59-61°F.).
In the right conditions, this wine can be kept for 8 or even 10 years before drinking.
AOC Monthélie - pronounced Mont'lie - is situated on the edge of the Côte de Beaune, in a modest 130 hectare vineyard between Volnay and Meursault. This appellation comprises 15 Climats classified as Premier Cru and produces mainly red wines (88%).
The wine-growing landscape is shaped by a combe that supports vines on its two slopes and in its alluvial cone. On the Auxey-Duresses hillside, the white, slightly chalky soils are composed of Argovian marl. They face east and are mainly used to produce red wines. The red soils of the Volnay hillside are marked by iron oxide and have a more variable east-south orientation. The alluvial cone, which accounts for 75% of the Monthelie appellation's production, is made up of scree (altitude between 230 and 370 m).
‘Sur la Velle is located near the Volnay vineyards, next to Clos des Chênes.
Harvested by hand, the grapes are sorted in the vineyard and on arrival at the winery. The grapes are destemmed, crushed and then put into temperature-controlled vats. Cold maceration (8°-10°C) for a few days, followed by alcoholic fermentation. Selected Burgundy yeasts and daily punching of the cap. After devatting, the free-run juice and press juice are blended. Aged for 12 to 15 months. Aged in oak barrels (30% new barrels).
