100% Chardonnay, the king grape for white Burgundies.

Tasting notes

Colour: Pale gold colour.
Bouquet: Expressive nose of minerals and white flowers, very balanced with notes of honey suckle and white pepper.
Palate: Full attack on citrus fruit, with toasted aromas and. This wine is full fruited with a lots of freshness, a vivacious elegance and persistence. A quite lively, mature, well-structured and harmonious wine.

Food and wine pairing

Drink and enjoy this great white Burgundy as an aperitif, poultry with cream, veal blanquettes and mild cheese.

Serving suggestions

Serve ideally between 12°C and 14°C. (54-60°F.).

Ageing potential

6 to 8 years, in good storage conditions.

Origins

Savigny-lès-Beaune wine is produced in the commune of Savigny, in the famous Burgundian Côte de Beaune. The Appellation d'origine contrôlée (AOC) Savigny-lès-Beaune may be used for red and white wine with respectively Pinot Noir and Chardonnay as the main grape variety. The name of the appellation is sometimes written simply as Savigny, without the lès-Beaune part. The production consists of slightly over 85 per cent red wine, and slightly less than 15 per cent white wine. There are no Grand Cru vineyards within Savigny-lès-Beaune. The village of Savigny les Beaune benefits from a unique location that lead to two different types of wines : the hillside next to Pernand Vergelesses gives mineral, fruity, and elegant wines, and the other one, located near the Mont Battois, produces richer nectars, with more structure. The Premier Cru vineyards, called "les Vergelesses", are found at the borderline between the towns of Pernand and Savigny, with southern exposure.

Vinification and maturing

The Chardonnay grapes were hand picked and the harvest was followed by bunch selection.

The juices were cooled and then settled. The musts were then matured in casks and vats during fermentation and follow the same vinification process as the great Burgundy wines. Stirring and ageing over lees.
