MÂCON-IGÉ "Sous la Roche"

Tasting notes

Colour: Beautiful golden colour.

Nose: Elegant and subtle, but very expressive. Scents of citrus fruits, especially lemon with some herbaceous notes (mint).

Palate: Fresh attack. Good balance. Round and supple with a good acidity. We find the aromas perceived in the nose.

Food and wine pairing

A perfect accompaniment to salads and grilled poultry. This white wine will sublimate local freshwater fish dishes (carp from Dombes with white wine, pochouse from Verdun sur le Doubs). For cheeses, opt for fine goat's cheese with a bloomy rind and semi-dry maturing.

Serving suggestions

10 to 11°C as an aperitif, 11 to 12°C during the meal.

Ageing potential

Can be enjoyed in its youth or kept for 5 years in the cellar.

Origins

Appellation of Saône-et-Loire which extends over 58 hectares (of which 45 ha in white) on the heights of Mâconnais between 260 and 420 m of altitude. The name "Sous la Roche" is most probably due to the fact that the vineyard is located below a rocky outcrop dominating the hillside at this point. The "Sous la Roche" vineyard benefits from a limestone soil and a siliceous subsoil which give the wine its fresh and mineral character.

Vinification

Sorting of the grapes, pneumatic pressing then vinification in thermo-regulated tanks and aging in stainless steel tanks for 6-8 months.
