Grape varietals
The Pinot Noir is the only grape variety of the Bourgogne Hautes-Côtes de Nuits appellation.
Origins
The vineyards of the Hautes-Côtes de Nuits are spread throughout the Côte de Nuits in Burgundy, from Dijon to Corgoloin. They cover the well exposed hills overlooking the Côte.
The vineyards were rebuilt in 1950 in order to obtain a high quality wine. Pinot Noir and Chardonnay grape varieties were planted on its best slopes. All the efforts invested into enhancing quality are now bearing fruit.
The vineyards cover a total surface of 570 hectares, for both white and red wines.
Tasting notes
Colour: ruby red with garnet highlights.
Nose: nice typicity with notes of red and black fruit, slightly spicy (pepper).
Palate: nice depth in the mouth. Fruity and animal flavors, silky tannins, smooth with a discreetly spicy finish, fresh and fruity. Good length on the palate.
Food and wine pairing
Serve with grilled or roasted red meats, poached eggs in red wine sauce « œufs en meurette », warm meat pie, or pasta. Can also be paired with game birds and cheeses.

Serve at a temperature of 15°C.
Ageing potential
This wine can be enjoyed now or it can be kept in good conditions for 3 to 4 years in the cellar.
Vinification and maturing
Harvesting is traditional: by hand, total or partial (75%) destemming precedes cold maceration that lasts 72 hours. Vatting lasts around twelve days or more depending on the vintage. The wine is aged in casks for 10 months. Malo-lactic fermentation is always completed.
Vintage : 2016
It's been a long time since winegrowers had not had to bear a long hard way to give birth to a new vintage. During the months of April, May and June 2016, they suffered the dramatic consequences of freezing, hail falls, downy mildew attacks, fears of powdery mildew, etc. Many are those who suffered very hard from these vagaries of the weather, to the point of sometime wishing that year ends as soon as possible and doubt of the future. Finally, July and then August and September, with the full sun, made forget a little of the trouble and return the morale in the vineyard.
In Burgundy, during the harvest, the vines were green but a lot, however, hid under their foliage, a lack of grapes. Burgundy this year still produces a small crop, even very small for some names (Chablis). But for saved vineyards and those who could enjoy a "push", the grapes were at the rendezvous, in good proportion. When the winemaker, this year of 2016, brought all the necessary care to this vine battered by successive storms and managed to bring the fruit to mature, so wines are of good quality. They are concentrated, with enough silky tannin, and have an acidic balance of good quality
It is therefore a year of "winegrower and winemaker", which will make a qualitative difference. This turbulence will not have been enough to begin our morale and we are proud to introduce you to the vintage 2016.
