Grape varietals
The Pinot Noir is the grape variety of Corton Grand Cru.
Origins
Corton is a red Grand Cru in the Côte de Beaune in Burgundy. The appellation covers hectares in the village of Aloxe-Corton , Ladoix Serrigny and Pernand Vergelesses. The vineyard is on the “butte d’Aloxe" (mound of Aloxe), south and east exposure.
Tasting notes
Colour: nice deep ruby.
Nose: intense red and black fruits aromas (morello cherry, blackcurrant and blackberry).
Palate: this wine is racy and generous. Tannins became round and the mouth is ample, refined while remaining very strong.
Food and wine pairing
This powerful and frank wine is excellent with game and roasted meat in spicy sauce. Most cheeses are also particularly delicious with Corton.
Serving suggestions
Serve at a temperature of 15-16 °C.
Ageing potential
Undoubtedly, a wine for laying down, a Corton requires 5 to 10 years to peak and until 15 years for very good vintages.
Vinification and maturing
A 100% handmade harvest. The grapes are sorted out at their arrival on the winery. Destemmed, the berries are placed on stainless steel tank for fermentation: 6 days of cold maceration (8°C). Alcoholic fermentation during 17 days with punching down (twice a day) and selected yeast. 100% ageing on barrel on French oak barrel 228liters during 17 months. After this maturing process, we made a raking, no fining, a delicate filtration before bottling.
Vintage : 2015
Here is a vintage we will remember for a long time, with a solid reputation that has already travelled throughout the world. In all my winemaker's memory, we have not seen such a vintage in a very long time!
The seasons came and went while leaving their mark on the vine: a rather cold late winter caused the vine to suffer more than usual, forcing it to draw its strength from the very depths of the soil in order to allow the buds to bloom.
A mild and dry spring allowed the vines to develop peacefully and a very warm summer filled their fruit with sunshine.
In the year 2015, the seasons have produced the perfect grapes, of an irreproachable sanitary condition and an optimal maturity. A winning combination for this exceptional vintage. The wines all present a balance with incredible aromatic fullness and amazing concentration. Actually, the only downside has been the yields - but then again this does bring another touch of originality to this remarkable vintage.
