Grape varietals
Chardonnay is the grape variety for Puligny Montrachet whites.
Origins
Between Meursault to the north and Chassagne to the south, Puligny Montrachet is part of the trio of prestigious villages of great white wines on the Côte de Beaune. Puligny shares the Montrachet appellation, the Prince of Burgundy’s white crus, with Chassagne Montrachet.
The annual harvest is approximately 10,000 hectolitres in Puligny Montrachet, 4,500 hectolitres for Premiers Crus and 300 hectolitres for Grand Crus
Tasting notes
Colour: bright gold.
Nose: the bouquet has mocha aromas, warm cookies and vanilla with a hint of menthol
Palate: in the mouth it is both powerful and taut. The praline notes are revealed and there is a slight woodiness. It supports the complexity and great richness of this wine.
Food and wine pairing
This great wine has incredible balance and complexity and should be served with delicate, rich dishes. It is ideal with pan-fried veal with forest mushrooms, fillet of perch with beurre blanc or foie gras with brioche. It is also excellent with shellfish, sole fillet with a cream sauce, pan-fried scallops, chicken liver pâté, rabbit terrine and for cheese, it marries well with Roquefort

Ageing potential
This wine can be drunk young with its primary aromas and will also age very well in a cellar for the next 8 to 10 years.
Vinification and maturing
The grapes are harvested by hand very carefully selected at their arrival in the winery. Grapes are then immediately pressed, with a pneumatic press and maximum 2 bar pressure “to extract the best”. Musts obtained are cleansed during 8 to 12 hours, at a cold temperature of 8°C to 10°C. Then the juice is put French new oak barrels, (approximately 25% new barrels). Alcoholic fermentation and ageing are 100% done in barrels on lees with regular stirring. The wine is matured for 12 months before being bottled.
Vintage : 2015
Here is a vintage we will remember for a long time, with a solid reputation that has already travelled throughout the world. In all my winemaker's memory, we have not seen such a vintage in a very long time!
The seasons came and went while leaving their mark on the vine: a rather cold late winter caused the vine to suffer more than usual, forcing it to draw its strength from the very depths of the soil in order to allow the buds to bloom.
A mild and dry spring allowed the vines to develop peacefully and a very warm summer filled their fruit with sunshine.
In the year 2015, the seasons have produced the perfect grapes, of an irreproachable sanitary condition and an optimal maturity. A winning combination for this exceptional vintage. The wines all present a balance with incredible aromatic fullness and amazing concentration. Actually, the only downside has been the yields - but then again this does bring another touch of originality to this remarkable vintage.
