The Burgundy appellation covers 384 villages in the departments of Yonne, Côte-d'Or and Saône-et-Loire. From the north, in the Chablis and Auxerrois regions, southwards to the Mâconnais, via the Côte d'Or and Côte Chalonnaise, Burgundy wines come from a wide variety of terroirs. Pinot Noir produces beautiful, tightly-packed bunches of small, purplish-black grapes containing a sweet, colourless juice. This illustrious grape variety gives rise to all the great red wines of Burgundy. This Bourgogne Pinot Noir ‘Vieilles Vignes’ comes from vines around 40 years old in the south of Burgundy.
The grapes are harvested and then sorted. Cold maceration is then carried out to bring out all the fruit's aromas. Alcoholic fermentation is fairly short to allow more time for maceration. The wine is then matured on fine lees before malolactic fermentation, which completes the wine's balance.
