OriginsThis village appellation from the Côte Chalonnaise was of King Henri IV's savourite wines. The vinyard is dedicated to the production of Pinot Noir (237 hectares) and Chardonnay (45 hectares). 41,5% if the area is classified as Premier Cru.
Vinification and maturingHand-picked Pinot Noir grapes are sorted and destemmed. Alcoholic fermentation and maceration take place at controlled temperatures in open vats for 18 days. We punch down the cap regularly during the alcoholic fermentation. The wine is aged in barrels for 9 months.
