Origins“Vin de France” can be produced throughout the whole of France using grapes harvested exclusively within its borders. This quite new appellation (2009) allows for a greater liberty in winemaking compared to the appellation system. It is a great opportunity for our winemaker to express his skills with a wine with a steady style and unique personality.
Vinification and maturingThe grapes are machine harvested and the bunches are de-stemmed before undergoing a period of cold maceration to increase extract of colour. The alcoholic fermentation lasts 8-10 days at controlled temperatures, with a daily pumping over of the juice. Then the wine is kept in tanks for 4-6 months before bottling.
