Production area

The vineyards of the Petit Chablis appellation lie on either side of the river Serein. This AOC was instituted in 1944. It is one of the jewels in the crown of the Chablis region which forms the “golden gate” to Bourgogne. A Chardonnay wine through and through, Petit Chablis has, in fact, nothing “little” about it.

Origins

These carefully selected terroirs occupy the higher portions of the winegrowing slopes or the edge of the plateau. The soils are brown and derived from hard limestones, with patches of sandy silts. Altitudes: mostly between 230 and 280 metres, with various exposures.
Our Petit-Chablis comes from the plateau above the Grands Crus hill. It thus benefits from ideal sunshine.

Varietal

100% Chardonnay

Tasting notes

The wine is quite intense on aromas of pink grapefruit with a note of hazelnut. The palate is fresh and always fruity with a tension that persists and gives this wine a very nice length.

Vinification and maturing

Harvested on September 14, 2019, the grapes are pressed at length. The juice then undergoes a light static settling to remove the largest lees, thus promoting the purity of the aromas and the brightness of the color in the wine. Fermentation begins in temperature-controlled stainless steel tanks at between 18° and 20°C, and is fairly rapid to avoid oxidation of the aromas. Malolactic fermentation is 100% complete, then the wine is aged for 6 to 8 months on fine lees, without racking, to preserve all the aromas. Light fining with bentonite, only 1 filtration before bottling.

Food and wine pairing

Serve as an aperitif, with oysters and fish tapas. Will also be a good companion to all fish, poultry and white meats, grilled or in creamy sauce.
