Production areaThe Bourgogne Côte d’Or vineyard stretches over 65 km, from Dijon to the Maranges, and encompasses the Côte de Beaune and Côte de Nuits. Renowned since Antiquity, it grew thanks to the monastic orders, the Dukes of Valois, and the wine trade, before being structured by the Appellations d’Origine Contrôlée, which established the hierarchy of the terroirs. In 2017, producers from the Côte de Beaune and Côte de Nuits obtained the “Bourgogne Côte d’Or” designation for the regional Bourgogne appellation, thereby recognizing a precise geographical identity within the appellation area.
Origins
The soil is predominantly limestone, with a very characteristic ochre color. The subsoil also contains marl layers (a clay-limestone mix) at various depths, which give the wines of the appellation their structure. This wine comes from several parcels, about 40 years old, located in the lower part of Puligny-Montrachet.

Food and wine pairingTo be enjoyed as an aperitif with tapas, goose rillettes on toast, poultry terrine, or salmon toast with lemon cream. It pairs beautifully with delicate fish in sauce, buttered escargots, a parmesan-crusted poultry fillet, as well as soft, creamy cheeses.
