Production area

The Bourgogne Côte d’Or vineyard stretches over 65 km, from Dijon to the Maranges, and encompasses the Côte de Beaune and Côte de Nuits. Renowned since Antiquity, it grew thanks to the monastic orders, the Dukes of Valois, and the wine trade, before being structured by the Appellations d’Origine Contrôlée, which established the hierarchy of the terroirs. In 2017, producers from the Côte de Beaune and Côte de Nuits obtained the “Bourgogne Côte d’Or” designation for the regional Bourgogne appellation, thereby recognizing a precise geographical identity within the appellation area.

Origins


The soil is predominantly limestone, with a very characteristic ochre color. The subsoil also contains marl layers (a clay-limestone mix) at various depths, which give the wines of the appellation their structure. This wine comes from several parcels, about 40 years old, located in the lower part of Puligny-Montrachet.

100% Chardonnay.

Tasting notes

COLOUR: Bright pale gold.
NOSE: The nose is delicate, marked by a subtle floral bouquet and a discreet touch of wood.
PALATE: This Chardonnay, pure and unadorned, reveals a texture that is first firm then full, with remarkable volume where richness and acidity are perfectly balanced. Its long, taut finish is the hallmark of a wine with real character.

Vinification and maturing

The grapes were hand-harvested in mid-September 2024, then carefully sorted to retain only the finest clusters. They were then pressed in a pneumatic press, ensuring precise and gentle juice extraction while preserving the fruit’s integrity. Vinification took place in a temperature-controlled stainless-steel tank, followed by gravity-fed transfer into barrels at the end of alcoholic fermentation. The wine was then aged for 13 months on fine lees, without bâtonnage, with 50% in new barrels, and subsequently refined for an additional month in stainless-steel tank.

Food and wine pairing

To be enjoyed as an aperitif with tapas, goose rillettes on toast, poultry terrine, or salmon toast with lemon cream. It pairs beautifully with delicate fish in sauce, buttered escargots, a parmesan-crusted poultry fillet, as well as soft, creamy cheeses.
