Vinification and maturingThe grapes were hand-harvested in mid-September 2024, then carefully sorted to retain only the finest clusters. They were then pressed in a pneumatic press, ensuring precise and gentle juice extraction while preserving the fruit’s integrity. Vinification took place in a temperature-controlled stainless-steel tank, followed by gravity-fed transfer into oak barrels.
The wine was then aged for 8 months on fine lees, without bâtonnage, with about 40% in new barrels.
Bottled in autumn 2025 after fining and filtration.
